für den Erfolg des Gins und dass dies einer der komplexesten Drinks ist.

Wacholder gehört zu einer sehr alten Pflanzenfamilie, den Zypressengewächsen. Diese Gewächse sind etwa 250 Millionen Jahre alt. Damals gab es lediglich einen großen Kontinent, der Pangaea genannt wird. Das ist auch der Grund dafür, warum die bekannteste Wacholderart Juniperus communis sowohl in Nordamerika, Afrika, Europa und Asien beheimatet ist.

In der Toskana, Marokko und Osteuropa werden die Wacholderbeeren meist wildgeerntet. Allein in Albanien, Bosnien und Herzegowina werden jährlich ca. 700 Tonnen Wacholder geerntet. Die Ernte wird von den Pflückern dann an überregionale Gewürzfirmen verkauft. Die meisten Gin-Hersteller beziehen ihren Wacholder in den 3 genannten Regionen.
Eine Wacholderbeere wiegt ca. 0,1 Gramm. So kann man sich vorstellen, wieviele Beeren geerntet werden müssen, um auf die benötigte Menge Wacholder zu kommen, der die Grundlage für die vielen leckeren Gin-Sorten auf der Welt sind.

Der pro-Kopf-Verbrauch des Wacholderdestillats in London lag im Jahr 1743 bei einem halben Liter pro Tag (Kleinkinder inklusive). Diese Zeiten sind vorbei… Trotzdem ging vor 2 Jahren der Wacholderbestand in England so stark zurück, dass vermutet wurde, der Wacholder stirbt innerhalb der nächsten 50 Jahre in England aus.

Glücklicherweise wird das nicht passieren. Fakt ist allerdings, dass der heutige Bedarf und die Nachfrage an Gin, auch in Deutschland, sehr groß ist.

Wacholderdestillate gibt es mittlerweile so viele auf dem Markt, dass Fachleute davon ausgehen, dass der Gin-Hype bald zu Ende sein wird. Das Kundeninteresse scheint allerdings noch immer so groß zu sein, dass ein Ende erstmal nicht in Sicht ist. Im Gegenteil, die Lust auf Gin wächst eher noch weiter.

Grund dafür sind neben Regionalität und Lifestyle vor allem die Vielseitigkeit des Wacholders. Es gibt 4 Moleküle, die das Wacholder-Aroma prägen:

  • Myrcen (Umwandlung in verschiedene Aromen möglich, wie z.B. Minze und Geranien)
  • Sabinen (würzig, pfeffrig)
  • Limonen (zitrusfrisch)
  • Pinen (harzig, Aroma wie Terpentin)

Die ätherischen Öle mit den genannten Aromen machen Wacholder zu einem hervorragenden Botanical für Gin.

Wacholder

Viele Inhaltsstoffe des Wacholder kommen zusätzlich auch in Kräuter, Früchten und Gewürzen vor.  Aufgrund der gleichen Moleküle harmonieren Wacholder, Koriander und Zitrusschalen in einem Gin. Das war bereits im Jahr 1978 bekannt. Hier wurden die Inhaltsstoffe von Wacholder und Koriander analysiert und verglichen. Es wurde festgestellt, dass die Moleküle zwar unterschiedlich sind, sich jedoch auffallend viele chemische Verbindungen in beiden Gewürzen finden ließen. Dadurch werden sie zu perfekten aromatischen Begleitern des Gin.

Das Prinzip gilt für etliche Botanicals: je mehr gleiche Inhaltsstoffe, desto besser passen die Zutaten zusammen. Zu Wacholder passen sehr viele.
